Yabby (Cherax destructor and Cherax albidus)
Description
The Yabby is a semi aquatic freshwater crayfish characterised by a smooth shell. The shell can vary greatly in colour, depending on location, season, and water conditions but is usually olive, brown or black.
Habitat
The Yabby is commonly found in a wide range of freshwater habitats throughout most of Victoria and New South Wales, including rivers, streams, pools, swamps, billabongs, and dams. Farming occurs in New South Wales, South Australia, Victoria and Western Australia.
Remarks
The name 'yabby' is used to describe all 30 different species of Cherax in Australia, except for Marron (C. tenuimanus) and Redclaw (C. quadricarinatus). Most yabbies are sold cooked and the flesh is sweet and well regarded.
