Premium Fish Stock

Zucchini & Mussel Broth

In a large pot, brown 50g butter and add diced onion, thyme, salt and pepper. When the onion is translucent, add the diced zucchini. Lightly brown zucchini and add fish stock. Bring to a boil. Strain the zucchini but keep the liquid. Cool the zucchini.

Using the same pot, brown the rest of the butter and add the de-bearded mussels. Add white wine and put lid on to steam the mussels.
